Thoughts for Today...

Ok, so meant to post this morning but as usual is was a little crazy...! Now Lills has FINALLY decided that maybe, just maybe she will nap, so I am enjoying my afternoon coffee and doing some browsing before startin in on some more orders :). Oh, and I don't know who is more excited about this contest...me or yall! I am pretty proud of myself that I got everything set up and going alright :).

This extremely cold weather has now decided to turn cold and snowy!!! Enjoying the pretty view out the window and glad we got our errands done for the day! It was a warm 14 degrees when we were out earlier :).... So far though, no big snowflakes just lots and lots of little flurries. Still pretty though!

The super cold temps lately had me wanting something warm and cozy for dinner tonight (our fave chili recipe!!! yum!), which gave me the idea of sharing some of our fave comfort recipes. I thought maybe yall would like to share too! So todays theme is COMFORT FOOD!!!! :) What are your fave winter recipes? Ones that make you want to snuggle up in a warm blanket and have some nice family time.

The first one I am going to share, my Mom shared with me. It's super quick and easy, and so few ingredients I have it memorized! I loved it growing up and when we moved away, she was so nice as to write a few of the ones I love down....still have it on the yellow notepad paper, lol!

Chicken Pot Pie!!!

Things you will need:
- 1 large can of Chicken or 2 cups cut cooked chicken breasts
-1 can veg-all
-2 cans cream of potato soup
- 1/2 cup skim milk
- 1/4 tsp pepper
-1/4 tsp thyme

Crust:
-Feel free to make homeade pie crust, or use frozen...I always use two of the roll out crusts found in the buscuit section. :)

Mix all of the top ingredients together in a large bowl, poor into one pie crust, and top with the other. Pinch sides and cut slits for venting. Bake in oven for 45-55 min at 400 degrees. Let cool for a good 10 min! During the last 15 min, I usually use a square of tin foil with the center cut out to cover the edges so they dont burn :). For extra comfort, serve your fave rolls, bread or biscuits along with the pie...our fave are the pills croissants, before I roll em up I spread a little butter on the dough :)


The second recipe is one I get asked to make the most...especially around the Holidays ;). I love Pumkin, whether it be a muffin, cookie, cake, coffee...or BREAD! So a few years ago I searched for a bread recipe that I loved. It ended up being a mix of a few different ones, and let me tell you...it's pretty awesome! ;)

Things you will need:
- 3 cups all purpose flour
-1 tsp salt
-2 tsp baking soda
-2 tsp baking powder
-2 tsp cinnamon

-1 1/2 cups oil
-2 cups sugar
-4 eggs, well beaten
-2 cups canned pumpkin

I always add in a dash of nutmeg and a pinch of cloves for extra spice...but they arent a must...more of a preference :) Oh, and of course feel free to add nuts and cranberries...we just like it without those too!

Wisk all dry ingredients together in a meduim size bowl and set aside. Combine oil and sugar in a second larger bowl and mix well. Blend flour mixture into wet mixture, then add eggs and pumpkin. Pour into 2 WELL GREASED loaf pans,lol important so it doesnt stick, I use crisco on a paper towel for this part :). Bake for 1 hr or until a toothpick or knife comes out clean....at 350 degrees.

We love the bread just as is, but for a special occation I find topping it with cream cheese drizzle icing is amazing too! And if you want an even fancier look, you can always sprinkle the icing with chopped nuts....
